Reassuringly expensive, second only to saffron, this sweet queen of spices entranced Alexander the Great who transported them from India to Europe. Fresh and floral, they add a regal touch to sweet and savoury dishes.

How to use
Cardamom releases a subtle flavour when tossed into hot oil at the outset of cooking and is often used to kick start curries along with other whole spices. The seeds are punchier when ground or blended. Add it to desserts or favourite smoothie drink or bowl. If you’re only using the seeds, grind them fresh and they can quickly lose their fragrance.
