Smoky Roasted Pumpkin Mash

Pumpkins are not just for Halloween. 

  • Roast 750gm Pumpkins in their skin for 30 minutes drizzled with olive oil
  • Toast half a teaspoon of black peppercorns, black cardamom seeds, coriander seeds and cumin seeds. Grind to a fine powder.
  • Peel and cube the pumpkin
  • Melt a chunk of butter in a hot pan and mix in the ground spices until they sizzle
  • Toss in the pumpkin, salt and mash with enough milk to get a smooth, creamy result
  • Top with more butter and enjoy as a side
