Pumpkins are not just for Halloween.
- Roast 750gm Pumpkins in their skin for 30 minutes drizzled with olive oil
Toast half a teaspoon of black peppercorns, black cardamom seeds, coriander seeds and cumin seeds. Grind to a fine powder.
Peel and cube the pumpkin
Melt a chunk of butter in a hot pan and mix in the ground spices until they sizzle
- Toss in the pumpkin, salt and mash with enough milk to get a smooth, creamy result
- Top with more butter and enjoy as a side
